Jean Farrar, who has lectured on nutrition
at Eisenhower Hospital in Rancho Mirage, California, and
the College of the Desert in Palm Desert, California, recently
shared some of her excellent recipes with us.
Do not heat this sauce, because the nuts
will become rancid and the vitamins
will be destroyed.
1/2 cup (125 ml) cashews
4 Yellow Delicious apples
2/3 cup (166 ml) water, more if needed
Dice apples. Blend cashews with water in a blender until
smooth. Add
apples to blender and continue blending until smooth. Add
more water if
necessary. Serve at room temperature or chilled over fruit
salad. Makes
approximately 1 1/2 cups (375 ml).
Note: If you use another variety
of apple, such as the Fuji apple, add honey,
bee pollen or maple syrup for additional sweetener.
